The experience
The morning air in Niagara had that crisp edge you only get near the vineyards in late fall. Our driver met us right at our hotel: no fussing with parking or shuttles. The van felt roomy, but not too fancy, just comfortable enough to relax and chat as we rolled out past the rows of frosted vines. I could still smell the last bit of wood smoke from a nearby farmhouse as we pulled up to our first stop.
Our guide, Mark, knew his stuff. He explained how ice wine’s made from grapes left to freeze on the vine, which I’d never seen before. He pointed out a few bunches still clinging to the branches, sugar-heavy and waiting for harvest. We tried a pour at a family-run spot where the owner’s dog wandered between tables. The wine was syrupy-sweet but not cloying. Honestly, it tasted like nothing else I’ve had. If you’re not into dessert wines all day, you can swap in a regular winery or even a craft brewery. Just let them know when you book.
We kept things casual: no strict schedule, just a list of places we wanted to try (up to five). At one stop, there was this tiny bakery next door selling warm cheese buns. Perfect between tastings. If you want lunch or dinner somewhere special, they’ll sort it out ahead of time (meals aren’t included though). Every tasting is pay-as-you-go, so you only try what you want. Even on a rainy day, it felt cozy inside each tasting room: locals chatting about harvests and weather while we sipped.
