You paddle through oyster leases and finish by opening the catch yourself.

Kayak the Pambula River near Eden on Yuin Country, paddling through working oyster leases at Broadwater farm, then learn to shuck and taste Sydney Rock Oysters. The 3.5-hour activity needs no prior kayaking experience. A guide provides instruction and points out wildlife as you glide the water. If oysters aren't your thing, swap them for a local cheese tasting platter instead.

The experience

The Pambula River run starts and ends at Broadwater Oysters, an award-winning farm tucked inside Beowa National Park near Eden and Merimbula. You paddle a sit-on-top kayak through the water where the oysters actually grow, so the leases themselves become part of the route. Your guide handles the instruction (no experience is required), and points out the wildlife and the working details of the farm as you move through the river. The water here is what makes the oysters what they are, and paddling it gives you the geography before you taste the result.

The second half happens back at Broadwater, where you learn the art of shucking: how to open a Sydney Rock Oyster without damaging the meat or the shell. Before that, the guide walks you through why these oysters matter: how they grow, how the flavours shift with the seasons, and the best way to handle and store them once you've opened one. You taste what you've learned to shuck. If oysters don't appeal to you, let the operator know when you book and they'll swap the tasting for a local cheese platter instead.

Is this one for you?The paddle is moderate in effort and the water entry is gentle from a sit-on-top kayak, so it suits anyone with a moderate fitness level who wants to move under their own power rather than watch from a boat. The 3.5-hour span gives you time on the water and time learning at the farm without an early start or a full day commitment.
