The experience

The menu is built around what South Australia grows and produces, with each dish designed to move through flavors and textures in sequence. The Head Chef curates what arrives at your table. The Sommelier team selects wines to complement each course. You sit for roughly ninety minutes and move through four courses without choosing what comes next. The "feed me" format means the kitchen decides the journey.

Wine pairing is the other half of the experience. The Sommelier team has selected wines specifically to work with each dish, so the progression is as much about how the wine and food talk to each other as it is about either one alone. This is not a wine list you pick from. The pairings arrive with the courses.
