Dinner happens at a local restaurant where you eat Bun Bo (beef noodle soup, with a vegetarian option), Vietnamese pancakes, spring rolls, and crispy banana crackers, plus jasmine tea. After that, you move to a seafood restaurant for a second meal with Saigon beer included. The evening wraps at a music bar where the younger generation of Saigon unwinds—live music, local crowd, the kind of place you'd walk past without a guide.
