  • Dine on prepared salmon dishes

The Experience

Li greeted us at the door with a quick smile and a joke about the rain — “If you wait for sunshine here, you’ll never eat.” I liked her right away. The kitchen smelled like cedar and something savory, maybe the smoked salmon dip we’d end up making together. There were only five of us, just enough to feel cozy but not crowded. Someone’s kid was coloring at the table, which made it all feel more like a friend’s house than a class.

I’m not exactly a chef (my partner will confirm), but Li made it feel easy. She showed us how to break down the wild Alaska salmon — her hands moved fast, but she slowed down so I could try. I totally mangled my first piece; she laughed and said it would still taste good. We talked about Ketchikan’s fisheries and how you can spot real wild salmon back home (there’s a trick to the color). The pan-seared salmon sizzled loud enough to drown out the ferry horn outside for a second.

Lunch was simple: salmon cakes, rice, salad that actually tasted fresh — nothing fancy, just honest food. The smoked salmon dip was salty and creamy and I kept going back for more crackers even though I said I wouldn’t. Li poured coffee while telling us about her dad fishing these waters since he was a kid. It started raining harder against the window but nobody seemed to mind; maybe that’s normal here.

I still think about that meal sometimes when I see packaged “Alaska” fish at home and wonder if it’s really from here. If you want a cooking class in Ketchikan that feels like hanging out with locals instead of watching someone on stage, this is it. You’ll leave full — and probably smelling faintly of smoke and dill.
