The experience

The class starts with hotel pickup and a trip to a lively local market in Khao Lak, where you walk through stalls of fresh herbs, spices, and produce with your chef. You get 200 THB to spend on ingredients, and the chef talks you through what's good that day and how Thai cooks choose their flavors. This is not a fixed menu you follow. You decide what to cook based on what catches your eye and what you want to eat. Som Tam, Pad Thai, Thai curries, or desserts: you pick, and the chef guides you through making it.

Back at the cooking school, you work hands-on with the equipment and ingredients you bought. Every person in the group can prepare something different if they want, and the chef moves around the kitchen sharing tips and stories as you cook. The class stays small so there's real attention to what you're doing. If you have dietary needs (vegetarian, vegan, allergies), let them know when you book and the chef will work with that.

When everything is cooked, you sit down together and eat what you made. Tea or coffee comes with it. The whole thing takes about three hours, and you leave with recipes and the knowledge of how to make these dishes at home.
