The Experience

We stepped out of the tuk-tuk straight onto a dusty lane, roosters somewhere behind the fence, and that first breath — smoky, green, humid — kind of hit me. Our host, Priya, waved us over with both hands and handed me a mug of milky tea before I’d even set down my bag. I don’t know if it was the tea or just being welcomed into her home like that, but something about it made me relax right away.

Inside, we got to pick our own vegetables for the rice and curry (I went for eggplant because Priya said it was “the king” here). She showed us how to crack open coconuts for sambal — which is way harder than it looks on YouTube. My coconut milk attempt was… not great. Priya’s husband laughed and showed me again, slower this time. The kitchen smelled like turmeric and wood smoke; my shirt picked up some of both.

We cooked everything ourselves — seven different curries plus dhal and papadam. Priya just hovered nearby, nudging my hand when I tried to stir too fast or added salt too soon. There was this moment when she let me taste the curry straight from the wooden spoon; I swear I still remember that mix of spice and coconut sweetness. Lunch was all of us sitting together on low stools, eating with our hands while her little boy kept sneaking papadams off my plate.
