That's how the Negombo cooking class actually starts: not with a lecture on Sri Lankan spice history, but with your hands doing the work, learning by repetition what no video could teach you. You arrive to tea or coffee, settle in, and then the real lesson begins with coconut milk — how to crack it, how to extract it, how the whole foundation of the cuisine rests on that one ingredient.

You get to choose which vegetables and proteins go into your curry, which means you're not just following a recipe someone else designed. The instructor walks you through the spices — turmeric, coriander, cumin, fenugreek — and you smell each one, taste a pinch, understand why they go in at different times. Then you cook it yourself, stirring the pot, adjusting the heat, tasting and adjusting again. It's slower than watching someone else do it, and that's the point.
