The quad bike operator at Atlantis Dunes didn't say much when we arrived, just handed over the helmet and pointed at the dunes stretching north of Cape Town. That's the thing about this day—it moves fast and doesn't wait for you to catch your breath. You're picked up from your hotel at 7:45am, and by mid-morning you're throttling through sand with Table Mountain visible in the distance, the Atlantic wind in your face. After the dunes, the day shifts. You head to the V&A Waterfront, where a helicopter is waiting.
