The experience

You leave your Casablanca hotel at 7am and drive three hours on the motorway to Fes, with a short break halfway. Once you arrive, your licensed guide meets you and leads you through the city's major sites. The Royal Palace comes first: its ornate gates and gardens date partly to the 17th century, though the palace's foundation reaches back to 1276. You'll see the North Tower, a 16th-century fort built by the Saadi dynasty and now home to the Museum of Arms, where you can photograph the panoramic view of the entire city.

The heart of the tour is the medina, the largest in the world and a UNESCO World Heritage Site. Your guide takes you through its more than 9,000 narrow streets and alleys, pointing out the Bou Inania Madrasa (built in 1350 and the only madrasa in Morocco that also functioned as a congregational mosque), and the Al Quaraouiyine University, founded in 859 and still operating today. You'll visit the Chouara Tannery, the largest of three in Fes, where leather has been dyed and treated in the same way for centuries. The round stone vessels filled with dye and the workers cleaning hides in the pools make for striking photographs. The medina itself comprises three distinct quarters: Fez el Bali, the oldest section surrounded by walls; Fez-Jdid, or New Fes, which includes the Mellah, the former Jewish Quarter; and the Ville Nouvelle, built during French occupation.

After exploring the city with your guide, you return to your driver and head back to Casablanca, arriving at your hotel or airport by evening. The entire trip (drive, tour, and return) takes 12 to 13 hours. You travel in an air-conditioned vehicle with bottled water and WiFi on board. Specialized infant seats are available if needed.
