We met our guide just before dawn—honestly, I wasn’t sure if I’d regret the early wake-up. But as we slipped into our kayaks and pushed off into the Xochimilco canals, it was so quiet you could hear the paddle drip. The air felt chilly but not sharp, and there was this faint earthy smell from the water and plants that reminded me of wet leaves after rain. Our guide, Ana, kept things relaxed—she pointed out a heron half-hidden in the reeds and told us how these floating gardens (chinampas) have been here since way before Mexico City swallowed everything else up.

I’m not exactly a morning person but seeing the sky go from dark blue to this weird pink-orange over the volcanoes—Popocatépetl and Iztaccíhuatl—was something else.
