The Experience
Most ramen classes teach one flavor. Here you make three, and the difference is in what you do with your hands. At Ramen Dojo Tokyo, just three minutes from Shibuya station, you'll start with flour and water, knead the dough into sheets, and feed it through professional Japanese noodle machinery to pull springy, fresh strands. Then comes the part that sticks with you: using a blowtorch to sear your chicken chashu until it's caramelized and smoky. By the time you've finished the third style, you've moved through the whole craft instead of watching someone else do it.
The tasting is built into the class. You assemble three mini-bowls—one tonkotsu (creamy pork bone broth), one shoyu (savory soy-based), one miso (rich and deep)—so you can taste the difference between them side by side and photograph each one before you eat. The instructor speaks English and keeps the pace beginner-friendly; the group stays under eight people, so there's room to ask questions and move around the kitchen without crowding.
