What’s the experience like?

The first thing I remember is the crunch of gravel under my sandals when we stepped out at the first winery—somewhere between Pyrgos and the caldera rim, the air already thick with that salty-sweet smell you get near the sea. Our guide, Eleni, waved us over to a row of twisted old vines. She said they’re called kouloura—basket vines—and showed us how they curl low to the ground to dodge the wind. I tried to say “Assyrtiko” like she did (I didn’t quite nail it), but she just grinned and poured our first glass. The wine was sharp and cold, almost lemony, which surprised me since it was so warm out.

We went on to two more wineries—each one felt different. At one place, there were cats weaving between our feet and a man in blue overalls who barely looked up from his barrels but nodded when we passed. The cellars smelled like stone and something earthy I couldn’t place. We tasted ten wines in all—I lost count after six, if I’m honest—and by then everyone in our little group was swapping stories about where we were from. There was a couple from Milan who kept asking about Vinsanto (the sweet dessert wine), so Eleni finally just brought out an extra bottle for us to try with some cheese that tasted faintly of thyme.

Dinner was outside as the sun started sinking behind Oia—the sky turned this weird peachy color that made everyone reach for their phones at once. The food came out family-style: tomato fritters (crispy edges), grilled fish that flaked apart under my fork, bread still warm from somewhere nearby. I caught myself just sitting back and watching everyone talk over each other, laughing about which wine was their favorite or how many photos they’d taken of the view already. It felt less like a tour by then and more like some odd little dinner party where nobody knew each other before sunset.
