The experience

First thing that happened: our guide, Mark, waved us down right outside the Fairmont Empress Hotel (which really does look like it belongs in some old British film). He asked if we’d ever tried candied salmon before. I hadn’t, so he pointed out a little shop near Fisherman’s Wharf and said we could swing by later. I liked how he just slipped local stuff into conversation, not in a “tour script” way. The air smelled faintly salty from the harbor and there were gulls everywhere: louder than I expected.

I’m not usually into gardens, but Butchart Gardens kind of caught me off guard. It’s this huge old quarry turned into something… well, I don’t want to say magical because that sounds cheesy, but it was peaceful in a way I didn’t expect. The Japanese Garden part was quiet except for the crunch of gravel underfoot and these little bursts of color from the maples.
