First thing that happened — our guide, Mark, waved us down right outside the Fairmont Empress Hotel (which really does look like it belongs in some old British film). He asked if we’d ever tried candied salmon before. I hadn’t, so he pointed out a little shop near Fisherman’s Wharf and said we could swing by later. I liked how he just slipped local stuff into conversation, not in a “tour script” way. The air smelled faintly salty from the harbor and there were gulls everywhere — louder than I expected.

I’m not usually into gardens, but Butchart Gardens kind of caught me off guard. It’s this huge old quarry turned into something… well, I don’t want to say magical because that sounds cheesy, but it was peaceful in a way I didn’t expect. The Japanese Garden part was quiet except for the crunch of gravel underfoot and these little bursts of color from the maples. Mark told us about Jennie Butchart planting things over a century ago — apparently she got bored of looking at limestone pits (can’t blame her). We wandered for almost two hours and honestly, I barely looked at my phone.

Driving back into Victoria, we passed Beacon Hill Park and spotted a peacock just strutting around like it owned the place. There was this moment where everyone in the van went silent watching it — then someone’s kid sneezed and startled the bird (it happens). We stopped for quick photos at Craigdarroch Castle (just outside), then zipped through Chinatown — Fan Tan Alley is so narrow you have to walk single file. Mark joked about getting stuck if you eat too many Nanaimo bars. He also pointed out Emily Carr House; I’d heard her name but didn’t realize she grew up here.

I keep thinking about that first taste of candied salmon from Fisherman’s Wharf — sweet and smoky at once. We finished up with a view of the Parliament Buildings all lit up (over 3,000 lights apparently), which felt oddly cozy for such a grand place. The whole day trip around Victoria & Butchart Gardens felt like hanging out with someone who actually lives here — not rushed or forced. Still can’t pronounce “Craigdarroch” right though.
