The Experience

We kicked off the Nassau food tour right in the middle of downtown — no slow build-up, just straight into the thick Bahamian air that smells like sea and fried something (I never figured out what). The real fun started at the Bahamas Rum Cake Factory though. The smell hit before we even got inside: sweet, boozy, warm sugar. We tried a slice so soft it nearly collapsed in my palm (and yes, I bought two for later). At Graycliff Chocolatier I made a mess trying to pipe mango filling into a chocolate shell — the chocolatier just laughed and handed me a napkin.

The Queen’s Staircase felt heavy somehow — carved by hand by enslaved people centuries ago. It was quiet there except for our footsteps echoing on stone. After that came John Watling’s Distillery where we sipped rum that tasted almost smoky and sharp at first but mellowed if you let it linger. Someone in our group asked if locals really drink this stuff; Patrice grinned and said only on weekends… or Tuesdays.

I’d never heard of guava duff before but at The New Duff they served it hot with sauce that tasted like sunshine and nostalgia (if that makes sense). My fingers were sticky after but nobody cared. Last stop was Arawak Cay for the fish fry — loud music, kids running around, plates piled high with conch fritters (included in the tour) and fried snapper. The breeze picked up right then, carrying laughter and grill smoke down the row of pastel shacks. Honestly, I still think about that view across the harbor as we finished up — not everything needs a neat ending.
