The first thing I noticed leaving Adelaide was how the air changed—saltier, somehow softer as we wound along the coast toward McLaren Vale. Our guide, Pete, had this way of pointing out things you’d never spot on your own (like the old gum trees leaning over the road, or which vines were shiraz just by their shape). There were only six of us in the van, so it felt more like a day out with friends than a tour. I’ll admit, I was nervous about pronouncing “Vermentino” at our first stop—Li laughed when I tried to say it in Mandarin. Pretty sure I butchered it but the wine still tasted bright and fresh, kind of like green apples if you close your eyes.

Each cellar door had its own personality. Maxwell Wines was all stone floors and cool air—someone was bottling mead nearby and you could smell honey drifting through. At another spot (I think it was Hugo Wines?), we sat outside for lunch: big platters with salty olives, local cheese that actually squeaked between my teeth, bread that tasted almost sweet. The whole table went quiet for a second when someone poured the Grenache. Sunlight came through the leaves overhead and everything sort of slowed down. It’s funny what sticks with you.

I didn’t expect to find something like the d’Arenberg Cube—a glass Rubik’s Cube dropped in the middle of vineyards—but there it was. We took photos pretending to hold it up like tourists do (no shame). At one family-run winery, an older woman poured our last tasting and told us about her parents planting those vines after the war. She had this way of swirling her glass that made me want to listen longer.

The drive back to Adelaide felt quieter. Maybe everyone was sleepy from the wine or just full from lunch—I don’t know. But looking out at those rolling hills again, I kept thinking how much more alive they looked now that I’d met some of the people who work them every day.
