The Experience
“You ever tried balancing a bowl of noodles on your knee while scooters zip past? That’s how my morning in Saigon started. Our guide, Linh, showed up outside the hotel with two helmets and this big grin — I was still half asleep, honestly. The city was already humming, motorbikes weaving around us as we slipped into these narrow alleys I’d never have found alone. The air smelled like strong coffee and something frying — maybe banh xeo? My brain couldn’t keep up with all the smells at first.
We stopped at this tiny spot where old men were playing cards and slurping soup. Linh ordered for us — I tried to say ‘pho’ properly but she just laughed and corrected me (I think I’ll always get it wrong). Sitting on those little plastic stools, knees practically at my chin, I tasted something spicy-sour that made my eyes water in a good way. There was this moment when a vendor handed me fresh fruit — dragonfruit, bright pink and cold from the ice — and I realized how much of Saigon you miss if you stick to big streets. It’s loud but somehow friendly; people wave or just nod as they pass.
Later we wandered through a market packed with everything from live fish to stacks of herbs I couldn’t name. Linh pointed out which greens go in which dish — she even let me try bargaining for some limes (I failed spectacularly). Somewhere between the third snack and my second iced coffee, I stopped worrying about traffic or getting lost. It felt like being let in on a secret side of the city, one bite at a time.
