From 19:00 onward, the boat moves slowly along the Perfume River while you eat through eight courses: fig salad with shrimp and meat, pineapple spring rolls, delicate Hue rice cakes, shrimp in passion fruit sauce, lemongrass pork skewers, Bún Bò Huế (the city's signature beef noodle soup), lotus seed dessert, and seasonal fruit. At 19:45, the music begins—live Ca Huế folk songs performed on the boat—and you move into the lantern ceremony. You write a wish on a paper lantern and release it onto the river, watching it drift away with the current. This is the ritual the evening builds toward, and it happens while the boat is still moving through the night landscape of Hue. By 20:30, you're back at the station. The photos taken in the traditional clothes get sent to you via WhatsApp, so you have them to keep.
