The Experience

I’ll be honest, I’m not a morning person—so when our guide knocked at the hotel before sunrise for this Hoi An fish market tour, I was questioning my life choices. But then we stepped into that first light by the river, and it just hit different. The air was thick with the smell of fresh fish and something salty-sweet—fish sauce maybe? Women in conical hats were already bargaining hard, voices rising over the clatter of baskets. Our guide, Minh, grinned and handed me a tiny cup of something that nearly knocked me sideways (homemade rice wine at 6am is a thing here apparently). I tried to say “thank you” in Vietnamese—Minh laughed so hard he almost dropped his phone.

Afterwards we squeezed into a tiny roadside place for breakfast. No menu—just whatever’s hot that morning. I still think about that bowl of noodles: chewy, smoky from the broth, with herbs that tasted like nothing back home. Coffee came strong and sweet, served by an older woman who winked when she saw my face after the first sip. She told us her family’s been running this spot for decades.
