What’s the experience like?

The first thing I noticed was the sound — not traffic or engines, but this soft splash from a canal as we rolled our bikes off the van. The air felt thick with green smells, like wet leaves and something sweet I couldn’t name. Our guide, Minh, grinned and handed me a helmet that looked like it’d seen some stories. “We go slow here,” he said. “No rush.” So we didn’t.

We started out together along these narrow paths that wound between banana trees and little houses painted in faded blues and yellows. Minh stopped us at a cacao farm where the owner cracked open a pod right in front of us — the pulp inside was sticky and tart, nothing like chocolate yet. He let us taste it (I made a face; Minh laughed). Later we passed a dragon fruit farm; the pink fruits looked almost fake against all that green. Somewhere around there Minh waved goodbye — “You know the way now!” — and suddenly it was just us pedaling under low branches, dodging chickens.
