The five-course menu rotates through four entrée options: kalbi-braised prime beef with crispy onion crumble, fresh mahi-mahi filet with macadamia nut butter and lilikoi emulsion, summer squash and spiced papaya with the same nut butter and emulsion, or a surf-and-turf pairing of both beef and fish. Each course is plated and served between moments of watching the water and the sky. A professional photographer moves through the evening capturing the light and the table. Photos are available for purchase if you want them. After dinner, fresh espresso is served onboard.
