The Experience

I didn’t really know what to expect when I walked into that old brick building in Charleston’s French Quarter — I just remember the smell hit me first. Warm butter, something sweet baking, maybe a hint of spice? Our guide, Chef Angela, greeted us like she’d known us for years and handed me an apron before I could even get nervous. She laughed when I told her I’d never made biscuits from scratch (“You’re about to!”), and suddenly it felt more like being at someone’s home than any sort of formal class.

We chopped and stirred and got flour everywhere (well, mostly me). Making pimento cheese was messier than I thought — my hands still smelled faintly of sharp cheddar hours later. Chef Angela told stories about her grandmother’s red rice recipe while we waited for the cobbler to bubble in the oven. There was this moment where the sunlight caught the dust motes above the old wooden table, and everyone just sort of paused to watch the steam rise off the cornbread skillet. It sounds silly but it felt… grounding? Like time slowed down for a second.

Sitting down together after all that work — eating what we’d actually made — was honestly my favorite part of this Charleston cooking class.
