You visit the Blue Mosque, photograph Palm Jumeirah and the Museum of the Future, then step into a heritage house in Old Dubai for Arabic coffee and the city's actual history. The Al Farooq Omar Bin Al Khattab Mosque stops you first. It's a short traditional water taxi journey, the kind locals have taken for decades, and from the water you see the old souks and the wooden dhows that still trade here. Then you're walking through the Gold and Spice Souks themselves—the dazzling gold displays, the layered aromas of cardamom and saffron and clove, the narrow alleys where your guide points out which stalls have been here longest and what the prices actually mean. The whole tour runs 4 to 5 hours depending on traffic, with pickup from your hotel between 8:00 and 8:45 AM and drop-off when it's done. You're back before lunch if the roads cooperate.
