The Experience

You get picked up at your accommodation on the Costa del Sol in an air-conditioned vehicle and driven into the Serrania de Ronda mountains, where the day's first stop is a 16th-century restored convent turned winery. The owners meet you and walk you through how they rebuilt the ruin while keeping the original structure intact — the barrel room is the old chapel, with recovered frescoes still visible on the walls. You taste a selection of their wines with local tapas on the terrace, looking out over the Tajo gorge.

The second winery sits in the foothills near the Acinipo ruins, a Spanish cortijo with cellars hand-carved into the stone hillside. The winemakers themselves host you for a tour of the cellars, then a three-course meal on their terrace (weather permitting), where you taste more wines as you watch the vineyards and mountains. Free-flowing wine accompanies the meal throughout the day. If the timing works, the owners may bring out a guitar and play flamenco as the sun sets. You're driven back to your accommodation around 18:00 or when the light goes.

Your guide is a qualified wine expert who knows the winemakers personally and understands the history and traditions behind Ronda's full-bodied wines. She handles the route, the tastings, the food pairings and the timing, so you move through the day without arranging anything yourself. The vehicle is air-conditioned and the pace is leisurely — this is not a rushed itinerary.
