Baños de la Encina sits about forty kilometers south of the Sierra Morena, and the castle rises from the landscape the moment you arrive — fourteen square towers, crenellated walls, and a fifteenth tower the Christians added after they took it in 1225. The local guide meets you at the entrance and walks you through the oval-shaped complex, which was built from tapial (earth, lime, and river stone) in a way that adapted to the hill itself rather than flattening it. The whole structure has barely weathered eight hundred years, which is why it's one of the best-preserved Almohad fortifications in all of Spain.

You'll see where the Iberian walls still stand inside, traces of occupation from the Copper Age, and the double water cistern the Almohad builders installed in the twelfth century — a detail that tells you how seriously they engineered this place for a siege. The guide points out the recent excavations and what they've uncovered about the emiral period, when the castle was one of several rigid control points along the Guadiel depression and the Sierra Morena passages. After Fernando III's conquest in 1225, the Christians wrapped one of the Arab towers in stone and raised it into the Tower of Homage, which you can still see standing separate from the rest. It was declared a National Monument in 1931, and walking through it now, you understand why — the preservation is almost unreal.
