You arrive at Alcalá del Júcar, a village of whitewashed buildings stacked on a rocky outcrop above a gorge carved by the emerald Júcar River. The 12th-century Moorish castle sits at the top, its ramparts offering views across the valley and down to the river below.

On foot through the old town, you pass cave homes carved directly into the rock face over centuries, the blue-domed Church of San Andrés, and the Roman bridge. The village holds a bullring built into the gorge itself—an unusual sight. You'll stop at scenic viewpoints (in March, almond blossoms cover the hillsides), walk down to the river beach where summer swimmers cool off, and step inside the famous caves to drink something cold while standing in rooms hollowed from stone. The castle entrance and cave access are included; your guide handles the logistics.

Lunch happens at a restaurant of your choice, either overlooking the village or the river, where you eat Castilian regional dishes and taste local Manchuela wine.
