The Experience

"The lamb is gone by ten o'clock — you have to come hungry and early," our guide said as we stood outside Argana café on Jemaa el-Fnaa, and he wasn't exaggerating. The Marrakech street food tour moves fast, and it has to. We started with a short introduction, then headed straight into a local restaurant that's been serving the same dishes for over 80 years — the kind of place where tourists don't usually end up, where the menu is what the cook decided to make that morning. The walls were worn smooth from decades of elbows, and the food tasted like it had been perfected by repetition.

After that came the olives market, where we tasted through maybe five or six varieties — some brined so long they were almost black, others still bright and sharp. Then we walked to Mashoui Alley, where sheep are cooked in underground ovens and carved up right there on the spot. The meat falls apart, and yeah, it's as good as people say it is. But the guide was right about the timing — by mid-morning, the best cuts start running out.
