The Experience

Abdou meets you at his door in Essaouira with tea already brewing. He grew up between the old medina and the beach here, learned to cook from his mother, and spent years working as a chef across Morocco — but this is different from a restaurant kitchen. His home is where he teaches, and within the first few minutes you're standing at his counter chopping onions and garlic the way his family has for generations. He talks you through each step of the Moroccan tajine, explaining not just the how but the why: which spices go in first, how the slow cook changes the meat, what his mother would say if you rushed it. If you've never cooked before, that's fine. If you cook all the time, you'll still learn something about technique and timing that doesn't live in any cookbook.

While the tagines are in the oven doing their slow work, Abdou brings out traditional Moroccan tea and homemade pastries. This isn't a rushed break — it's the part where you sit, breathe, and actually talk. He'll answer questions about the food, about Essaouira itself, about where to eat when you're on your own, which neighborhoods to walk through, what the beach is like in different seasons. The tea is strong and sweet, the pastries are still warm, and you're in someone's actual home, not a cooking school with a schedule printed on the wall.

When the tagines are ready, you all sit down and eat together. You made this. The bread is fresh Moroccan bread, the flavors are real, and Abdou's approach to sharing his culture is straightforward — no performance, just food and conversation. He'll give you practical tips about your time in Essaouira before you leave, recommendations that come from living here, not from a tourist guide. The whole experience runs at a pace that lets you absorb it instead of just rushing through steps.

What’s included

Your experience includes the hands-on cooking class where you prepare a Moroccan tajine from start to finish, traditional Moroccan tea and homemade pastries during the break while the dish cooks, and a shared lunch or dinner of the meal you've made. Abdou also provides local recommendations and tips about Essaouira before you leave.
