San Gervasio, Cozumel's most important archaeological site, takes up the middle of the day. Your guide (trained and certified by SECTUR, Mexico's tourism authority) walks you through the ancient structures where Mayans lived, worshipped and left behind a pyramid construction unlike anything on the mainland. You'll learn how Mayan canoes crossed open water to reach this island and pay tribute to Ixchel, the goddess of fertility and the moon. The site entrance is included. The walk takes about an hour.

A tequila and mezcal tasting comes next, a 20-minute stop where you taste two of Mexico's most storied drinks and hear the history behind each one.
