The experience
The meal starts with a live eel. You'll see it before the chef begins. A master unagi chef walks you through the traditional techniques: how the knife moves, why the timing matters, what separates a properly prepared eel from a rushed one. This is not a performance staged for tourists. It's the way the restaurant trains its own staff, and you're watching the real work. You'll grate your own wasabi from fresh root, a small act that changes how the rest of the meal tastes. The Eel Indulgence Course moves through grilled eel liver, crispy eel bones, eel grilled without sauce, and unajū, eel over rice, each one showing a different part of the fish and a different technique.
Kawagoe itself is why this matters. Thirty minutes from Tokyo's crowds, it's one of the few places near the city where these food traditions haven't faded into restaurants that cater to tourists. The restaurant is traditional, the chef is local, and the people teaching you are the ones who do this work every day. If you choose the English-speaking guide option, they'll explain the history and the craft as you eat. Without it, the restaurant staff will guide you through the meal in Japanese. Either way, you're learning from people who know the food, not from a script.
The experience runs two hours. Sake pairing is available as an add-on if you want to pair the courses with local Japanese varieties. Children from age 3 are welcome. Public transportation reaches the restaurant, and if you're traveling with an infant, a pram or specialized infant seat is available.
What’s included

Is this one for you?Choose the English-speaking guide option if you want the history and technique explained as you watch and eat. The Japanese-only version works just as well if you're comfortable following the visual demonstration and tasting your way through the traditions. Either way, the small-group format and after-hours timing mean you're learning from the chef and the restaurant staff directly, not from a guide performing for a crowd.

Top questions
Can children come?
Yes. Ticket types: Child (3 to 19 years). Under 3: they can't be included in the booking.
What exactly is unagi and why is Kawagoe known for it?
Unagi is freshwater eel, and Kawagoe earned its reputation as a center of eel culture because the tradition has survived there when it faded in larger cities. The town's historic restaurants still practice the classical preparation methods, and the local expertise runs deep: chefs here train for years to master the knife work and timing that make the difference between good eel and exceptional eel.
Will I understand what's happening if I don't speak Japanese?
The restaurant staff will guide you through the meal and the preparation in Japanese. If you want explanation in English, you can add an English-speaking guide at checkout. They'll translate the chef's demonstration and tell you about the techniques and history as you eat. Without the guide, the experience is visual and tactile (you watch the knife work, you grate the wasabi, you taste each course), so language is less of a barrier than it might seem.
What does the two-hour experience actually include?
The Eel Indulgence Course includes grilled eel liver, grilled eel fins, crispy eel bones, shirayaki (eel grilled without sauce), unajū (eel over rice), and a custard pudding made with caramel infused with eel sauce. You'll also grate fresh wasabi and watch the chef's live demonstration of traditional preparation. Sake pairing with three local varieties is available as an add-on. Alcoholic beverages are not included in the standard price.
How far is Kawagoe from Tokyo, and how do I get there?
Kawagoe is 30 minutes from central Tokyo by public transportation. The restaurant is accessible by train and bus, and the operator notes that public transportation options are available nearby. Transportation costs to reach Kawagoe are not included in the tour price.
