Coffee brewed from water you collect during the trek tastes different than coffee anywhere else.

The experience
You start at ONDO or your hotel in central Takayama at 8:30 a.m., then travel to the trailhead for preparation. The river trekking itself begins at 9:30 a.m., and the guide (certified by the Japan Mountain Guides Association) leads you through landscapes carved by volcanic activity while explaining the mountain culture that sustains life in the region. The harness, helmet, and river shoes are provided, and you wear them for the water sections of the trek.
Midway through, you stop for hand-dripped coffee. A professional barista brews it on-site using the fresh spring water you've collected during the trek: a detail that shifts how the coffee tastes and what it means. Alongside the coffee, you eat fresh sandwiches and soup made from locally sourced ingredients. By 1 p.m. the trekking is finished, and you return to ONDO by 2:30 p.m.
The tour is private (one to six people), so the pace and stops adjust to your group. If rain arrives, the guide proposes an alternative plan. If you'd rather not go, the fee is refunded. Public transport runs nearby if you prefer not to use the included pickup. Minimum age is twelve, and you'll need at least moderate fitness: the trek involves river walking and some scrambling, though it is not technical climbing.
