The experience

Tenuta La Viola sits in the hills of Emilia-Romagna and has been making wine with organic methods since 1998. The visit starts where the wine begins: you walk between the vineyard rows until you reach a high point where the guide explains how the estate got started and what sets it apart. From there, you move into the winery itself to see how they blend tradition with newer techniques, and you get to walk through the historic cellar where the wine ages.

The tasting comes last and pairs six wines, two of them Riserva, with a platter of local specialties made in the region. Depending on the season, you sit under a portico that looks out over the vineyards (spring and summer) or in the tasting room (winter). The whole visit runs about an hour and a half, and a guide who speaks English, Italian or French walks you through each step.
