The experience

What does it take to become a pizzaiolo? You'll find out in a Cesarina's home in Syracuse. The class runs three hours, starting with the fundamentals of pizza dough and tiramisu assembly, taught by someone who learned these dishes in her own family kitchen. You work through both recipes from scratch, hands-on, with your host guiding you through the techniques Italian nonnas have used for generations. The class is private, so the pace and focus stay on you and whoever comes with you.

Once you've finished cooking, you sit down to taste what you've made (pizza and tiramisu), paired with a selection of local Sicilian wines, water and coffee. This is the meal, not a side course. You eat the food you prepared. The experience is designed for families, and children of all ages can participate and cook alongside the adults. You'll leave with an official Le Cesarine apron as a reminder of the day, and more importantly, with the confidence to make these dishes in your own kitchen.

Le Cesarine is Italy's oldest network of home cooks, operating in more than 120 cities. The hosts open their own homes to travelers and teach from their family recipes, not from a script. Public transportation options are available near the home, so you can reach it without a car.
