The experience

You arrive at the company's olive grove and a sommelier meets you to walk the vineyards of the three Ostuni DOCs: minor varieties that have almost disappeared from the region. The walk moves through centuries-old plantings, and the vines themselves tell the story of what growers here have kept alive. After the vineyard walk, you descend into the medieval hypogeum, an underground oil mill built into the stone, where you can see how the land was worked before modern equipment arrived.

Back at the company, you settle in for a tasting of four wines produced on-site, each one paired with a selection of typical local products. You choose between a sparkling wine or a rosé as part of the tasting. The sommelier guides you through each pour, explaining what you're drinking and how these particular varieties connect to the soil and the history of the place. Two hours total gives you time to move without rushing and to ask questions about what you're tasting.
