The experience
You arrive at a local cook's home in Menfi and move straight into the kitchen. The host walks you through the recipes she learned from her own family (the ones written in her cookbooks, passed down by Italian grandmothers), and you handle the prep and cooking yourself. This is not a performance you watch. You are the one with your hands in the pasta dough, the one tasting and adjusting as you go. The starter, the fresh pasta, the main course with its side dish, the dessert. You make them all.
Once the cooking is done, you sit down at the table together. The meal you just made comes out, and the host pours wines from regional cellars: a selection of reds and whites chosen by someone who knows them. Water and coffee come with it. This is a private dinner, just you and the host (or your group, if you booked together), not a class full of strangers. The whole experience takes about two and a half hours from start to finish.
The host speaks English or Italian, whichever works for you. Cesarine, the network that runs this, has been placing travelers in home cooks' kitchens across Italy for years: over 500 cities, all hosts who chose to open their doors. Public transportation runs near the address, so you can reach it without a car.
