The experience

The bike ride opens in Piazza del Ferrarese, the old entry point to Bari's maze of narrow streets and alleys that climb toward the Swabian Castle. You'll pass the cathedral (its underground Roman walls called the Succorpo are still visible), and roll past the Norman-Svevo fortress that now holds temporary art exhibitions. The guide points out where the ancient Via Appia-Traiana once ran, built by Romans in the second century. Piazza Ferrarese itself has always been where the city's commerce and administration happened. Today it's where locals still gather.

After the ride, you move into a typical house in the old town where a local cook teaches you to make pasta by hand. This is not a demonstration. You're working the dough, learning the shapes, doing the thing. The kitchen is a family space, not a studio, and the atmosphere stays casual and unhurried. Once the pasta is ready, you sit down to eat what you've made, with a glass of red wine poured in the way a neighbor would pour it.

The whole experience runs about two and a half hours. Bicycles and helmets are provided. If you're traveling with an infant or small child, a pram or specialized infant seat is available on request. The activity runs in all weather. Note that the tour may shift to a bilingual format depending on the group's mix of languages, and it's not suitable if you have celiac disease.
