Day one starts in Bari Vecchia, the old town, where you walk from the Swabian Castle through the narrow streets to the Orecchiette Pasta Street: the heart of where locals still make the town's signature pasta by hand. A focaccia tasting breaks the morning, then you move inside the Museo Nicolaiano before heading to the St. Nicholas Basilica, a 1,000-year-old church built in the Pugliese Romanesque style. You stay overnight at a small historical apartment with all the comforts.

Day two shifts to the coast.
