The Experience
The first thing I noticed was the smell—warm, grassy, like sun-baked herbs and something sweet drifting from behind the old stone house. Our guide Maria waved us over with sticky fingers (she’d just been checking a hive, she said, laughing). She started telling us about her great-grandparents, how they planted these olive trees back when Crete was still mostly dirt roads and donkeys. I tried to picture it while she handed me a tiny spoonful of honey—dark gold, almost smoky. Didn’t expect that flavor at all.
We wandered between the trees and the beehives, Maria pointing out which olives make for the best extra virgin olive oil (“these ones are stubborn,” she grinned). There was a quiet hum from the bees—not scary, more like background music—and every so often you’d catch this sharp green scent from crushed leaves underfoot. She showed us how they cold-press their olives right here on site. It’s not some big factory; it’s more like a family kitchen that happens to smell like peppery oil and wild thyme.
At the end we sat outside in the shade—eight little bowls lined up: different honeys and olive oils to taste. Some were floral, others almost bitter or spicy. Maria gave us tips on what to pair with what (I definitely mixed up the order once or twice—she just smiled). I still think about that one honey with a hint of pine. We joked about taking a whole jar home in our suitcase but honestly? The memory might last longer than any souvenir.
