Chapel Down sits in what used to be a 15th-century shipbuilding port called Small Hythe—the kind of place where the history is just sitting there in the buildings. The tasting happens at the barrels, and you work through their sparkling and still wines with someone who knows the vineyard. The third vineyard, Woodchurch Estate, is smaller and newer—planted in 2009 on nine acres.
