What’s the experience like?

Gripping the handlebars tighter than I’d admit, I felt the first splash of saltwater hit my face just outside Dubrovnik’s harbor. The water out past the city walls was this deep blue-green, almost glassy in spots except where our jet ski chopped it up. The wind picked up a bit — not cold, just enough to sting your cheeks and make you squint. We slowed down near a tiny beach where two locals waved from their fishing boat.
