Pickup starts between 6 and 7 a.m. from your San Jose hotel, and the minivan heads toward Turrialba with a stop for a Costa Rican breakfast around 8 a.m. By the time you reach Tres Equis, the staging area where your guides are waiting, you've already crossed into a different climate — the Caribbean slope of the Central Valley. Each person gets a life jacket, helmet and paddle, then a safety briefing and a short practice run before the rapids start. The guides walk through the technique for the main whitewater sections: Huacas, Cimarrones and Dos Montañas.

The Pacuare itself is the draw. Nineteen miles of Class III-IV water means constant paddling through narrow gorges and around boulders, with waterfalls dropping into the river and the rainforest pressing in from both banks. The water stays warm — this is not a shock to the system — and the current does most of the work; your job is to stay in sync with the guide's calls and keep the paddle moving. Between rapids you float past blue morpho butterflies, sloths hanging in the canopy, toucans, poison dart frogs and a steady stream of birds. The river is narrow enough that you see the detail: the plants, the water color, the way the light hits the gorge. Lunch happens on the riverbank partway through, and then back into the water for the afternoon sections.

The full day runs about 11 hours from pickup to drop-off, so you're back at your hotel by early evening.
