The experience
The day starts at your Salento meeting point, where a guide boards you onto transport heading into Cocora Valley. You walk through the valley's photo attractions (the Chieftain Hand, butterfly platform, jeep setup, nest and condor wings among them) with time to stop at each one. The real draw is the hike with your guide to the mountain viewpoint, where breaks let you take in the full 360-degree landscape of wax palms and valleys while the guide explains the ecology and what you're seeing.
After descending back to transport, you drive through the coffee-growing region to Buenos Aires farm, where a typical peasant lunch waits: rice, salad, giant patacón, trout with hogao and lemonade (beef, chicken or pork available if you prefer). Then you change into traditional costume (sombrero, poncho and basket), and spend 2 to 3 hours on the premium coffee tour. You move through the full process: planting, care, growth, harvesting, pulping and drying, with a peasant snack of arepa and lemonade partway through. The day ends with transport back to Salento.
