We kicked off the morning with a quick coffee at a street stall—just strong enough to wake me up. Our guide, Minh, handed us helmets and we set off, weaving through Nha Trang’s quieter backroads. The air felt cooler out here, and every so often you’d catch a whiff of fresh bread from a family-run bakery. Minh pulled over at one of these spots, and we watched as a woman shaped dough by hand—she let us try a warm roll straight from the oven. It’s hard to describe, but it tasted like home.
Next up, we crossed a wooden bridge over the Cai River. The planks creaked under our bikes, and you could see fishermen in round boats drifting below. Minh stopped so we could take in the view—rice paddies on one side, coconut palms on the other. We passed through quiet villages where kids waved and shouted “hello!” as we rode by. At Thanh market, about 30km north, it was all noise and color—vendors selling herbs, dried fish, and those tiny green limes that go with everything here.
We visited families making mats, rice noodles, and sesame rice cakes. The mat weaver’s hands moved so fast I could barely follow. Minh explained how each family has their own recipe for rice cakes—some sweeter, some with black sesame. He picked up a few for us to snack on later. After gathering ingredients at the market, we headed for Ba Ho waterfall. The last stretch was bumpy, but worth it. The falls are tucked away in thick jungle—cool mist in the air, birds calling overhead. I took a dip in the pool (cold but refreshing), while some of the group tried cliff jumping from a seven-meter rock. Lunch was simple—grilled chicken and sticky rice by the water—but after that swim, it tasted perfect.
On the way back, we stopped at Long Son Pagoda to see the huge seated Buddha—24 meters high, you can’t miss it—and then visited Nha Trang’s old stone church from 1930. Minh shared stories about Buddhism and local history, nothing too formal, just enough to make it stick. We wrapped up at I-Resort Hot Mineral Springs for a quick soak before heading back to our hotel, dusty but happy.
