The Experience

The salt farm sits right there on the water—seven acres of shallow ponds catching sunlight, the ocean visible beyond the edges. Your Salt Farm Manager meets you at the office and walks you through the whole operation: where the water comes from (2,200 feet down, drawn up through pipes), how it sits in those ponds and slowly evaporates in the sun, and why the salt that's left behind tastes nothing like the stuff in a supermarket shaker. The water is ultra-pure, which means the salt crystals are clean and bright, and you can actually taste the difference when you get to the tasting part.

This is Hawai'i Island's only working salt farm, and it's the real thing—not a museum or a demo. The hand-harvesting happens here, done by the Chief Salt Maker, and the process follows what people have been doing in these islands for generations.
