Grinding the beans took more muscle than I expected—my hands smelled earthy after, and the old copper mill made this steady thunk-thunk sound that sort of set the mood. Our host, Ayşe, just smiled and nodded as I struggled. She said everyone’s first cup is a little messy. The whole thing felt kind of meditative, actually. You stand there watching the coffee bubble up through the sand, and for a second it’s just you, the cezve, and this warm dusty light coming in from Göreme’s street outside.
