The experience

The tour starts at Uçhisar Castle, the region's tallest freestanding rock formation, and the view alone (castle framed through the branches of a nazar boncuk tree, with Pigeon Valley spreading below) is the kind of thing that makes you understand why people come here. From there the day moves through five valleys, each one stranger than the last. The Kaymakli Underground City takes up the middle of the day. You descend into tunnels carved four thousand years ago, past storage rooms and living quarters and a kitchen, learning as you go why people built down instead of up: defense, temperature, water access. It's cooler underground, and the spaces are tight enough that you feel the weight of all that rock above you. The Göreme Open-Air Museum comes next, with cave churches from the 9th to 12th centuries still holding their frescoes and secco paintings deep in the stone.
