The Experience

That's how the day started — not with some grand Swiss moment, but with a guy in a dark suit holding a sign with our names, waiting in the Geneva hotel lobby while we were still upstairs. The thing is, that early arrival turned out to be perfect, because the drive to Gruyères takes about ninety minutes through countryside that doesn't announce itself. You're just moving through green valleys and small towns, and then suddenly the landscape shifts and you're in the kind of place that looks like someone painted it. The driver knew the roads and didn't need to check his phone, which meant we could actually look out the window instead of watching him navigate.

Maison Cailler came first — the chocolate factory in Broc, about twenty minutes before Gruyères itself. The discovery tour runs for an hour and twenty minutes, and it's not a quick walk-through; they actually show you how they make it, and then you get to taste. Not a sample plate. Unlimited chocolate. I'm not exaggerating when I say we stood there longer than we probably should have, trying different bars and ganaches, while the guide explained the history without making it feel like a lecture. After that, your mouth tastes like cocoa and you're already thinking about lunch, which is when you arrive at La Maison du Gruyère.

The cheese factory is the opposite pace — you watch the live cheese-making process, which means standing in a room that smells like milk and salt and watching people work with massive copper vats. They give you three types of cheese to taste, and the difference between them is actually noticeable once someone explains what you're tasting. The town of Gruyères itself is small enough that you can walk the main streets in twenty minutes, but the cobblestones and the old stone buildings are the kind of thing you photograph without meaning to. If you want to add the castle visit, it's optional and takes another hour or so — we skipped it because we were already full and a little tired, but it sits right there on the hill if you have the energy.

The return to Geneva is the same route back, which means you're not discovering anything new, but by then you've got chocolate in your bag, cheese in your stomach, and the driver drops you at your hotel instead of leaving you to figure out transport.
