What’s the experience like?

We stepped onto El Miarma just as the late sun was sliding over Seville — the kind of light that makes the river look almost golden. I didn’t expect the boat to feel so relaxed; people were chatting quietly, glasses clinking, and there was this gentle hum from the water. Our guide, Carmen, greeted us with a quick “buen provecho” and a grin before explaining how the tasting menu worked (she made it sound like a secret club). The first thing I tasted was that acorn-fed ham from Jabugo — salty, nutty, almost sweet somehow. I’m not even a cheese person but the Manchego sort of melts if you let it linger. Maybe it was just the cava talking.

We drifted under Triana Bridge while Carmen pointed out little things about the neighborhoods — she said Triana used to be all potters and flamenco singers. The prawn salad came out cold and bright, then salmorejo with these crispy onions on top (I tried to ask for seconds but apparently that’s not how tasting menus work). There’s something about eating chickpeas with oxtail stew while watching rowers slip past outside — it just fits. The boat didn’t rush; we had time to stare at old tiled buildings and wave at people walking along the riverbanks. It smelled faintly of orange blossoms when the wind shifted, or maybe that was just my imagination.

The last course was chicken cannelloni with truffle, which sounds fancy but tasted like comfort food after all those little plates. Dessert was fried milk on custard — Carmen laughed when she saw me trying to figure out what fried milk even is (I still don’t really know). By then, everyone seemed a bit looser, maybe from all the wine or just from floating along together. I keep thinking about that moment right before we docked again: lights coming on across Seville, reflections wobbling in the water. It felt like we’d seen the city in slow motion — and eaten half of it too.
