“You can bring your own cheese if you want,” our skipper grinned as we stepped onto the boat, which honestly set the mood for the whole two-hour canal cruise. Amsterdam looked different from the water — softer maybe, or just more honest, with bikes rattling overhead and old brick houses leaning like they were listening in. I kept catching whiffs of rain on stone and something sweet from a bakery drifting across the canal. Our guide, Pieter, started telling us about the Grachtengordel — not in that rehearsed way, but like he was letting us in on family gossip.

I didn’t expect to laugh so much. Maybe it was the Prosecco (included, by the way), or maybe just how relaxed everyone got once we’d drifted past the tourist crowds.
