What’s the experience like?

Roosters were still crowing when we hopped into the van at 9am—Huatulco’s air already warm, but not yet sticky. Our guide, Miguel, greeted us with a grin and a bottle of cold water. First stop: Santa María Huatulco. The church here isn’t grand, but the painted blue doors and the quiet plaza felt like a real slice of local life. A couple of older men were already sipping coffee outside the corner store, chatting about the weather.

The drive up into the Sierra Madre took about 45 minutes. The road twisted through thick green hills, with clouds hanging low over the peaks. You’ll want to keep your camera handy—at one point, Miguel pulled over so we could snap a photo at his favorite lookout. The air up in Pluma Hidalgo is cooler, with that earthy smell you only get in the mountains after a bit of rain. The plantation itself is tucked into the hillside. We watched workers sorting beans by hand, and I tried my first cup of their organic brew—smooth, just a little sweet, nothing like the stuff back home. Don’t forget some pesos if you want to bring beans back; I regretted not grabbing an extra bag for my neighbor.
